This Festive Bikini – How to Make It

We present a simplified take on a cocktail from our latest menu. Designed as a party-sized pre-mixed which is bursting with tastes of a holiday season, making it perfect for hosting a festive gathering. Save the extra syrup you can use for morning drinks, sweets, or to mix additional servings of bikinis.

Bikini Recipe

Serves 10 people

For the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar

Ingredients for the Premix (produces 850ml, to serve 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch

Directions

For the Citrus Syrup: Put the listed items into a saucepan, bring to a gentle boil, agitating so the sugar melts. After that, remove from the burner allowing it to cool fully. Transfer into a clean bottle, cap it keeping it in the fridge, where it will keep for about four weeks.

To make Cocktail Base: Pour all the liquid ingredients into a large bottle, leave to sit for 60 minutes, then filter it preferably using cheesecloth, to ensure it's fully clarified.

For serving: Add 85ml of the premix to a cocktail shaker packed with ice, and stir gently for a minute until cold. Pour into a cold coupe glass or a similar vessel, decorate with the cranberries and complete it by giving it a quick spritz of the essential oil over the top.
